Ingredients
8 free-range Eggs (medium-large)
1/2 tsp Salt
1/4 tsp Black Pepper
3/4 cup Spinach (chopped)
1/2 cup Red Capsicum (chopped)
8 Cherry Tomatoes (chopped in quarters)
1/2 cup Spring Onion
70g feta (crumbled)
Oil spray - for the baking tray
Preparation
Preheat oven to 180 degrees.
Whisk eggs in a bowl with the salt and pepper.
Spray a 6 muffin tray with the oil spray.
Stir through the vegetables and feta into egg mixture.
Pour the mixture into each of the muffin holes.
Bake for around 20 mins or until golden.
Carefully remove frittatas from the mould and serve!
